The only way to enjoy maximum flexibility and freedom on the AC100 will be to install an open operating system. Obviously the most common choice will be a Linux flavour.
Some may also want to have a DualBoot option as well, with the Original OS as fallback.

From what we read in various blog postings, Ubuntu, Debian and ChromeOS are the most promising candidates. The Gentoo page has instructions for installing Gentoo and contains hints for porting other distributions.

You can also have ARMedslack (an official ARM slackware port).

Just got my AC100 yesterday. Ubuntu seems to be the first choice for other OS on almost any hardware, but because we got so little RAM on our hardware, wouldn't it be most reasonable choice to use LXDE or XFCE instead of Gnome?

The current opensource kernel state has no support for some periferals so I suppose that just like me people are looking for multiboot that would allow to run ubuntu and android.
There is a way to get 10.10 running from external storage (but 10.10 for AC100 is unstable and often crashes while browsing)
Natty (with more recent kernel) can only be installed on internal storage replacing android or at least replacing the android kernel image which makes android unusable anyway.
Uboot is still experimental for AC100.

This leaves currently no way to have true multiboot for AC100.

I've an idea on how one could go about getting true multiboot for AC100:
Replace partition 5 with a modified tegra-2.6.29-arm2-ac100-boot.img that would include a kexec enabled kernel and a kexecboot initrd

This would let you boot android normally while letting you easyly boot a generic distro off external storage instead of the flash mode boot.
